Strawberry Swirl Cheesecake Recipe

For this filling you’ll need:

  • 1 cup of granulated sugar
  • 32 Oz of  cream cheese at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup of lemon juice
  • 3 eggs
  • 2 tablespoons of honey
  • 1 cup of fresh strawberries

In a large bowl place the cream cheese and mix gently until smooth and fluffy for 5 minutes – ensure there’s no lumps.

Now add the sugar and continue mixing for another minute.

Add 1/4 cup of lemon juice and the vanilla extract and mix for another minute.

Now add one egg  into the mix ensuring that it’s blended before adding the next egg.

Pour mixture into your favourite crust

Puree the strawberries in a blender then add the 1/4 cup of lemon juice and honey then heat over a medium heat for a few minutes.

Just as we created the swirls on the chocolate swirl cheesecake we take spoonfuls of the strawberry mixture and place onto the top of the cheesecake then use a knife to create the swirl effects.

Bake in the oven.
