Chocolate Raspberry Cheesecake Recipe

Make your favourite Cheesecake crust.

For the filling you'll need:

  • 32 oz Cream Cheese, Softened
  • 1 1/4 Cups of White Sugar
  • 3 Large Eggs
  • 1 Cup of Sour Cream
  • 1 teaspoon Vanilla
  • 6 oz of melted Semi-sweet Chocolate Chips
  • 1/3 Cup of Strained Raspberry Preserves

For topping you'll need:

  • 6 oz Semi-sweet Chocolate Chips not melted
  • 1/4 Cup of Whipping Cream

In a large bowl place **24 Oz** the cream cheese and mix gently until smooth and fluffy for 5 minutes – ensure there’s no lumps.

Now add the sugar then continue mixing for another minute.

Add one egg  into the mix ensuring that it’s blended before adding the next egg.

Add in the Sour Cream to the mixture.

Pour over the mixture over the crust.

Combine the melted chocolate with the 8 Oz of remaining cream cheese, then add the raspberry preserve and mix further.

Scoop tablespoons of this chocolate raspberry mixture and drop these onto the plain mixture in the cheesecake pan.

Now bake this in the oven.

Make the topping by heating the whipping cream with the chocolate chips over a low heat – ensuring you stir constantly.

Pour this lovely topping over the cheesecake before placing into the fridge.

 

Lemon and Lime Cheesecake Recipe

For the ingredients we need:

  • 32 oz of Cream Cheese at room temperature.
  • 2 Tablespoons of All Purpose flour
  • 4 oz of caster sugar
  • Finely grated zest and juice 1 lime
  • Finely grated zest 1 unwaxed lemon
  • Freshly squeezed juice 2 lemons
  • 1 large egg at room temperature
  • 5 oz double cream

In a large bowl place the cream cheese, flour and salt and mix gently until smooth and fluffy for 5 minutes – ensure there’s no lumps.

Now add the sugar, zest and juice and continue mixing for another minute.

Add the double cream and mix.

Now add one egg  into the mix ensuring that it’s blended well.

Pour the mixture into your chosen crust and place into the fridge overnight.

Garnish with fresh berries before serving.
